Found this comprehensive, 87-page Natural Foods Training Manual that contains nutritional information about all food types, dietary traditions, such as macrobiotic and Ayurvedic, food allergies, and food processing methods. Highly recommended.

The Cook’s Thesaurus is quickly becoming one of my favorite sites for solid information about the chemical properties of various foods and which ones can be substituted for each other in order to have the expected results.  I came to find this site when looking for wheat flour substitutions.
